
Betacarotene + Vitamin A are nature's way of preventing you from having to get Lasik eye surgery, and carrots provide a natural way for you to stay stocked up on both. I mean, do we even need to do a cost comparison?
Carrots are an excellent source of vitamin A and they're great when picked fresh from the garden. I find them to be more tender and, therefore, more manageable on the cutting board.
They grow better in loose soil that is well-drained, so make a couple of rows and plant. Early in my gardening experience, I planted them in the holes of the cinder blocks that bordered my garden. They grew, but they were hard to get out because the soil wasn't loose enough. Live and learn!
